Easy Vegan Edible Cookie Dough
Cookie dough, who does not love it? Soft, buttery, chocolate mush of heaven. I swear the reason it tasted so good was because you knew you could not eat it.
But who are we kidding – that is how it is with a lot of baked good. Brownies, cakes, and so on. The temptation to lick the spoon, but the nervousness of whether you’ll be sick later. Okay, I know some of you are rebels and did it anyway! But seriously, you knew eating too much cookie dough could get you sick from the raw eggs.
When I started cooking more plant based and vegan, I noticed myself being cautious – don’t cross contaminate, be careful with that, don’t lick this. Then I realized — I do not have to be scared anymore. There is nothing in these recipes that will make me sick. It is a marvelous feeling when I can confidently stick my clean finger into whatever I am making to taste it.
So fast forward to me making cookies and the revolution that occurs inside me when I find myself eating chunks of vegan raw cookie dough with no nervousness or regret. Atlas, I knew I needed to share this with you all.
So for all of you who are missed out on eating cookie dough or for those rebels who ate too much and maybe got ill, here is a very easy recipe for you!
- 3/4 C all purpose flour;
- 1/4 C maple syrup;
- 3 tbsp melted coconut oil;
- 1 tbsp vanilla extract;
- 1 tbsp nut butter;
- 2 pinches of salt; and
- 1/3 vegan chocolate chips.
Directions: Place all ingredients, other than chocolate chips, in a medium size mixing bowl and whisk until well combined. Then, fold in chocolate chips. Store in an air tight container in the fridge. Prior to eating, place on counter for 10 minutes to allow it to soften (the coconut oil will make it a little hard when chilled). Enjoy!
