
Peaches and Cream Mojito
It is no secret that I love peaches. Most of my recipes from this month are peach based, and, hellllo, it is in my username. Peaches are simply a summer time classic. But you know what else is? Mojitos!
Last year, Gabe and I traveled to Mystic, CT (a small beach town, which, if you have not been, you should go!) for the beginning of the summer. We both immediately ordered mojitos at a sea side bar. Immediately afterwards, two more people ordered mojitos… and so on and so on. I honestly could not believe how many people love mojitos! I knew they were a favorite, but to see a dozen people order mojitos in approx 20 minutes blew my mind.
What is it about these carefully crafted cocktails that is so addicting? Is it because, with one sip, you feel that you are sitting on a beach somewhere? Or is it because the coolness of the mint makes you feel refreshed? I am not sure, but I knew I needed to combine both my favorite summer tastes into one.
But, lets be real, I can’t just make a regular peach mojito. No, that would be too easy. I needed to add a little twist, or should I say cream? VoilĂ , peaches and cream mojito.
Now the question was, how much cream is too much? After a few trial and errors (which, trial and error with alcoholic beverages is very fun), we found the perfect balance. Refreshing. Sweet. Creamy. The perfect summertime cocktail.
So, put your 112 CD on and let’s make some peaches and cream mojitos!
Ingredients:
- 1 Peaches, diced (plus sliced peaches for garnish);
- 1/4 cup of Mint (plus more for garnish);
- 1.0 oz Coconut cream;
- Two pinches of sugar in the raw;
- Plain seltzer;
- 4.5 oz Rum; and
- 2 cups of Ice.
Directions: In a shaker, muddle the peaches and mint. Add in the rum, sugar, coconut cream and ice and shake vigorously. Pour mixture into three cups, evenly, then fill the rest of the cup up with seltzer. Cheers!
