Vegan Cheez Its
How did I go through thirty years of my life without knowing how easy it is to make vegan copy cat cheez its? Well, maybe because I was not vegan until recently, but how did I not know how easy it is to make copy cat cheez its in general!?
Cheez its were one of my favorite snacks growing up. My dad would buy them in bulk. Seriously, 5-10 boxes at a time… lol. I absolutely loved snacking on them, but as I got older, I realized they probably aren’t the -healthiest- snack to load up on.
Well these still aren’t the best snack around, in terms of healthy wise, they definitely could be worse. What makes them even better is that they are ready within 30 minutes. Yes, these are super simple to make, with a prep time of about 10 minutes and a cook time of 15-20 minutes.
Ready for the best part? They are made with easy ingredients that you probably already have!
So, lets take a trip down memory lane.
- 1 cup flour;
- 1 tbsp of yellow corn meal;
- 3 tbsp nutritional yeast;
- 1/2 tsp of baking powder;
- 1 tbsp of olive oil;
- 1/2 tsp of garlic salt;
- 1 tbsp of vegan butter, melted;
- 5 tbsp of cold water; and
- Course sea salt for topping.
Directions: Preheat your oven to 350 degrees F. In a large bowl, combined all of your dry ingredients. Then, using a whisk or your hands, add in your butter and olive oil. It will not mix too well, and it will look like crumbles. Slowly add water (start with 3 tbsp) and mix mixture with your hands. Continue to add water until dough forms. Transfer dough mixture onto a floured, large piece of parchment paper. Roll the mixture flat, to approx 1/4 of an inch (think cheez it density). Using a pastry cutter, or a knife, cut the dough to form approx 1 inch squares. Continue to do so with all of the dough. There will be uneven ones, you can either roll the dough again and report, cutting them into 1 inch squares, or cook the uneven ones (I did this). Place parchment paper on cooking tray. Cook for 15-20 minutes, until they are crispy on the bottom. Enjoy.
