
Peach Blackberry Toast
How do you like your fancy toast?
I like mine with peaches and blackberries, maple syrup and vegan cream cheese because the greatest thing since sliced bread is sliced peaches!
I absolutely love switching up my toast toppings! There’s so many things you can top your toast with.

This was a new one for me based exactly on what I had in my fridge. Peaches have a short season and, because I bought so many, I want to take full advantage of eating them all before they go bad.
The tanginess of the cream cheese balances the sweetest of the peaches. Plus, the blackberries add a great texture, and the drizzle of maple syrup gives this a breakfast feel.
You can use any bread you like. I chose to use sourdough because that is my go to for toast. A nice rustic Italian or normal wheat bread would also do well.

And while these are something I ate for breakfast, I believe they would also be a great appetizer at a picnic or cocktail hour.
Ingredients:
1 Peach, sliced;
Pinch of sugar;
1/2 tsp of vegan butter;
4 blackberries, sliced in half;
1/2 tbsp of maple syrup;
2 slices of sourdough bread;
Sprinkle of sea salt (optional); and
2 tbsp of vegan cream cheese (I used Kite Hill).
Directions: In a small frying pan, add butter and sugar over a medium heat. Then add your peach slices and sauté them until they a softened on one side (approx 4 mins). Flip and do the same to the other side. While the second side is cooking, toast bread to your liking. Smear cream cheese evenly on both pieces of toast. Layer on the peaches, then the blackberries. Drizzle with maple syrup, evenly. Sprinkle with sea salt. Enjoy!
