Spicy Walnut Chickpea Vegan Chorizo made from, well, walnuts and chicpeas and a bunch of spice. It is hearty and will make a meat eater believe its not vegan!
Spicy Walnut Chickpea Vegan Chorizo, who would think of such a thing… (quickly raises hand) Me! I love Mexican food, and while beans and veggies are great, I needed more. Something to stuff my tacos with. Yes, I add sweet potatoes and other fun, filling veggies, but I still needed more. But what?
Let’s be honest, I am not a big fan of Tofu or Tempeh, so the pre-made fake meat is not for me. I find it to always have a weird texture, and I hate that I cannot control my own seasoning.
So, the challenge started – what could I use to make vegan chorizo? After some experimenting with a few different things, I found the simplest ingredients work the best- walnuts and chickpeas.
Mexican food is a staple in this household. Quesdillas, tacos, burritos. Gabe and I love it all. In fact, we are always on the hunt for new mexican dishes and restaurants. Our absolute favorite is Taqueria Mexico in Wallingford, but we are so far away now!
We cannot get enough of mexican food! When we have taco night, we bring out the works. Our build your own taco tray included:
- This vegan chorizo;
- Avocado slices;

- Hard Taco Shells;
- Soft Taco Shells;
- Red, Green and Yellow peppers;
- Vegan Cheese; and
- ALL THE HOT SAUCE!
Did I mention, I love hot sauce? Lol.
This Spicy Walnut Vegan Chorizo is simple to make. All you need is a food processor or high speed blender, walnuts, chorizo, white vinegar, hot sauce and a whole lot of spices!

Vegan Chorizo made with walnuts, chickpeas and a whole lot of spice!
2 cups of walnuts
1 cup chickpeas
1 tbsp of chili seasoning
1 splash of hot sauce
1 tsp of salt
1 tsp of pepper
1 tsp of smoked paprika
1 tsp of white vinegar
2 garlic cloves
2 tbsp of aquafaba (chickpea water)
Oil for pan.
- Place chickpeas and walnuts in food processor and blend until they are coarsely chopped. If you have a small food processor, you may need to do this in stages.
- Add in all ingredients and pulse until they are well combined.
- Using a medium size frying pan, heat oil over medium heat.
- Add mixture and cook for 15-20minutes, or until it is browned. The chorizo will be a flesh color at first due to the chickpeas, but will brown up (as shown in the picture) after cooking for some time. Enjoy!
