Today is the last day of August. Meaning the last day of peach month. These baked basil cinnamon peaches are the perfect way to end it. Baked basil cinnamon peaches combine two August favorites into one.
If you have read just about any of my blog posts from this month, you will know that I love peaches! I love them in desserts, in savory meals and especially in my drinks. I mean, it is my user name, isn’t it?
Richard Nixon dubbed August Peach Month in America in 1982. It was suppose to encourage more people to “reach for a peach” I guess. Who knows if that happens, but it is still fun!
Despite my love for peaches, I have not paired them with basil. I actually never even heard of it until the Peach Collab that my friend, @saltedsunday and I ran in the middle of this month. Which, was the most fun collab ever! I still am so thankful that we had over 90 participants. There were so many beautiful creations, but the recipe that caught my interest was the one that paired basil with peaches.
I have so much basil from my balcony garden, and I am always looking for new ways to use it. So, I was super intrigued. I carefully crafted my first basil and peach experience – oh my gosh, YUM.
So, I figured what a better way to end a month dedicated to peaches with, well, peaches! But not just any peach recipe, one of the simplest. Therefore, I thought these Baked Basil Cinnamon Peaches would be absolutely perfect for today!
Roasting peaches increases their sweet flavors and allows their juices to flow out, almost as if it is a fine syrup. That syrup blends perfectly with vegan ice cream and the basil transforms this into a euphoric experience.
This recipe is extremely easy to do. You simply select three large, ripe peaches and slice them in half.
You next place the peaches on a greased tray and vegan butter to the top of them. Then, you place a cinnamon sugar mixture on top of them.
You then place the peaches in the oven and bake for 10-12 minutes. That’s it! After they are done, you top them with basil and vegan ice cream. It is that simple. They are perfect treat for the end of the summer. You may also grill the peaches, by placing them in tinfoil. Cooking times will vary.
